A hearty and wholesome overnight breakfast casserole that you prepare the night before for a hassle-free morning meal.
Ingredients
- 1 pound breakfast sausage
- 1 package frozen hash browns (about 30 oz)
- 8 large eggs
- 1 cup milk
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped green onions (optional for garnish)
Instructions
- Cook the breakfast sausage in a skillet over medium heat until browned. Remove from heat and let cool slightly.
- In a large mixing bowl, whisk together the eggs, milk, sour cream, salt, and pepper until smooth.
- Grease a 9×13 baking dish and layer half of the frozen hash browns at the bottom.
- Add half of the browned sausage, followed by a layer of shredded cheese.
- Repeat the layering with the remaining hash browns, sausage, and cheese.
- Pour the egg mixture evenly over the layers, ensuring all are well-coated.
- Cover the dish with foil and refrigerate overnight.
- Preheat the oven to 350°F (175°C) the next morning. Bake covered for 45 minutes.
- Remove the foil and bake for an additional 20-25 minutes until golden and set.
- Sprinkle with chopped green onions before serving warm.
Notes
For added flavor, try using flavored breakfast sausages or spices. Customize with veggies or different types of cheese.
