Description

A tender slow-braised beef roast with a tangy and sweet cranberry balsamic glaze that elevates any dinner occasion.


Ingredients

  • 1 chuck roast (about 3-4 lbs)
  • 1 cup cranberries (fresh or frozen)
  • 1/2 cup balsamic vinegar
  • 2 cups beef broth
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (rosemary or thyme) for garnish


Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Generously season the chuck roast with salt and pepper. In a large oven-safe pot, heat olive oil over medium-high heat and sear the roast on all sides until beautifully browned.
  3. Remove the roast and set aside. In the same pot, add the chopped onion and garlic, sautéing until soft and translucent.
  4. Add cranberries and balsamic vinegar to the pot, scrapping up any browned bits from the bottom.
  5. Place the roast back in the pot and pour in the beef broth.
  6. Cover and transfer the pot to the oven. Braise for approximately 3-4 hours or until the meat is fork-tender.
  7. Remove the roast from the pot and let it rest before slicing.
  8. Serve sliced topped with the glaze from the pot and garnish with fresh herbs.

Notes

Enhance the flavor by marinating the roast overnight. Searing longer will give a richer flavor. You can add ginger or soy sauce for additional taste.
