Description
A tender slow-braised beef roast with a tangy and sweet cranberry balsamic glaze that elevates any dinner occasion.
Ingredients
- 1 chuck roast (about 3-4 lbs)
- 1 cup cranberries (fresh or frozen)
- 1/2 cup balsamic vinegar
- 2 cups beef broth
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (rosemary or thyme) for garnish
Instructions
- Preheat your oven to 325°F (160°C).
- Generously season the chuck roast with salt and pepper. In a large oven-safe pot, heat olive oil over medium-high heat and sear the roast on all sides until beautifully browned.
- Remove the roast and set aside. In the same pot, add the chopped onion and garlic, sautéing until soft and translucent.
- Add cranberries and balsamic vinegar to the pot, scrapping up any browned bits from the bottom.
- Place the roast back in the pot and pour in the beef broth.
- Cover and transfer the pot to the oven. Braise for approximately 3-4 hours or until the meat is fork-tender.
- Remove the roast from the pot and let it rest before slicing.
- Serve sliced topped with the glaze from the pot and garnish with fresh herbs.
Notes
Enhance the flavor by marinating the roast overnight. Searing longer will give a richer flavor. You can add ginger or soy sauce for additional taste.
