A vibrant Mediterranean Chicken Stir Fry featuring tender chicken, fresh veggies, and tangy feta, perfect for busy weeknights.
Ingredients
- 1.5 lbs Chicken breasts, boneless & skinless (cut into bite-sized pieces)
- 3 tbsp Extra virgin olive oil (divided for cooking)
- Salt & black pepper (to taste)
- 2 medium Zucchini (sliced into half-moons)
- 2 Red bell peppers (diced into chunks)
- 1 large Red onion (sliced into strips)
- 2 cups Cherry tomatoes (halved)
- 1 cup Kalamata olives (pitted and halved)
- 4 cloves Garlic (minced)
- 1/4 cup Sun-dried tomatoes (chopped)
- 2 tsp Dried oregano
- 1 tsp Dried basil
- 1/2 tsp Dried thyme
- 1 Lemon (juice only)
- 0.5 cup Feta cheese (crumbled)
- 2 tbsp Fresh parsley (optional garnish)
Instructions
- Prep all your ingredients: chop the vegetables and slice the chicken.
- In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat and sear the chicken until golden, about 5-7 minutes. Season with salt and pepper, then remove from pan.
- In the same skillet, add another tablespoon of olive oil and sauté onions and garlic for 2 minutes until fragrant.
- Add zucchini, red bell peppers, and cherry tomatoes, cooking for another 5 minutes until tender but crisp.
- Return the chicken to the skillet and mix with the vegetables. Add sun-dried tomatoes, olives, oregano, basil, thyme, and lemon juice. Toss everything to combine.
- Before serving, sprinkle crumbled feta and parsley on top for added flavor.
Notes
Feel free to substitute vegetables based on what’s in season. Ensure your pan is hot before adding chicken for the perfect sear.
