Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil


Instructions

  1. Preheat your oven to 375°F.
  2. In one shallow dish, mix the breadcrumbs with half of the Parmesan cheese, Italian seasoning, salt, and pepper.
  3. In a second dish, beat the eggs and milk until well combined.
  4. Place the flour in a third dish for dredging.
  5. Dredge each chicken breast in flour, then dip in the egg mixture, and finally coat thoroughly in the breadcrumb mixture.
  6. Heat olive oil in a skillet over medium heat and cook the chicken for 3-4 minutes on each side until golden brown.
  7. Transfer the browned chicken to a baking dish.
  8. In a small bowl, mix the remaining Parmesan with the mozzarella and minced garlic, then sprinkle over the chicken.
  9. Bake in the preheated oven for 20 to 25 minutes until cooked through and cheese is bubbly.

Notes

For extra flavor, add herbs like rosemary or thyme to the breadcrumb mixture or include sun-dried tomatoes in the cheese mix.
