Ingredients

  • 8 oz pasta (fusilli or rotini)
  • 2 cups corn (freshly grilled or canned)
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cilantro, chopped
  • 1 lime, juiced
  • 3 tablespoons olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to the package instructions. Once done, drain and set aside to cool.
  2. In a large mixing bowl, combine corn, diced red bell pepper, red onion, halved cherry tomatoes, and chopped cilantro.
  3. In a smaller bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper to create the dressing.
  4. Once the pasta has cooled, add it to the vegetable mixture.
  5. Pour the dressing over the pasta and vegetables, then toss everything together until well-coated.
  6. Serve the salad chilled or at room temperature.

Notes

For a smoky flavor, grill your corn before adding it to the salad. Let the salad chill for at least an hour for the best flavor melding.
