Ingredients
- 8 oz pasta (fusilli or rotini)
- 2 cups corn (freshly grilled or canned)
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 cup cherry tomatoes, halved
- 1 cup cilantro, chopped
- 1 lime, juiced
- 3 tablespoons olive oil
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to the package instructions. Once done, drain and set aside to cool.
- In a large mixing bowl, combine corn, diced red bell pepper, red onion, halved cherry tomatoes, and chopped cilantro.
- In a smaller bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper to create the dressing.
- Once the pasta has cooled, add it to the vegetable mixture.
- Pour the dressing over the pasta and vegetables, then toss everything together until well-coated.
- Serve the salad chilled or at room temperature.
Notes
For a smoky flavor, grill your corn before adding it to the salad. Let the salad chill for at least an hour for the best flavor melding.
