Ingredients
- 4 cups vegetable broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onions, chopped
- 2 cloves garlic, minced
- 1 cup kale or spinach, chopped
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 tablespoon olive oil
- Juice of 1 lemon
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onions, minced garlic, diced carrots, and celery. Sauté until the vegetables are tender and fragrant.
- Pour in the vegetable broth and bring to a rolling boil.
