Ingredients

  • 2 cups Kodiak pancake mix (or another protein pancake mix)
  • 1 lb ground sausage (browned and crumbled)
  • 2 cups milk (using Fairlife can increase protein content)
  • 2 eggs
  • ¼ cup maple syrup
  • 1 cup shredded cheese (cheddar or Colby Jack)


Instructions

  1. Preheat your oven to 400°F (200°C) and spray a mini muffin tin generously with cooking spray.
  2. In a large bowl, whisk together the pancake mix, milk, eggs, and maple syrup until smooth.
  3. Gently fold in the cooked sausage and shredded cheese until evenly distributed.
  4. Fill each muffin cup about ¾ full with the batter.
  5. Bake for approximately 15 minutes, or until the muffins are golden brown and firm to the touch.
  6. Allow to cool for a few minutes before serving or storing.
