Ingredients
- 1 lb ground turkey or chicken
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 2 cups chicken broth
- 1 packet taco seasoning
- 1 cup sour cream
- 1 cup shredded cheese (optional)
- Chopped cilantro (for garnish)
Instructions
- In a large pot, brown the ground turkey or chicken over medium heat, breaking it up as it cooks.
- Once the meat is cooked through, add in the black beans, kidney beans, corn, diced tomatoes with green chilies, and chicken broth.
- Stir in the taco seasoning and bring the mixture to a boil.
- Lower the heat and let it simmer for 15-20 minutes, allowing the flavors to meld together.
- After simmering, stir in the sour cream until it’s well combined and creamy.
- Serve hot, topped with shredded cheese and chopped cilantro, if desired.
Notes
For extra creaminess, blend part of the soup and mix it back in before serving. Customize with toppings like avocado, onions, or jalapeños for an added twist.
