Ingredients
- 1 cup cottage cheese
- 2 cups rolled oats
- 1/2 cup sugar (or sweetener of choice)
- 2 large eggs
- 1 teaspoon vanilla extract

- 1/2 teaspoon baking soda
- 1 cup fresh or frozen blueberries
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the cottage cheese, rolled oats, sugar, eggs, vanilla extract, baking powder, baking soda, and salt until well combined.
- Gently fold in the blueberries, being careful not to break them up too much.
- Divide the muffin batter evenly among the muffin cups.
- Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
