Description

A vibrant and nourishing detox soup that’s packed with wholesome ingredients, perfect for a refreshing and light meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant, about 2-3 minutes.
  2. Add the diced carrots and celery, cooking for about 5 minutes until softened.
  3. Stir in the zucchini and bell pepper, cooking for an additional 3-4 minutes until they’re just tender.
  4. Pour in the chicken broth and bring to a boil.
  5. Once boiling, add the shredded chicken and dried thyme. Reduce the heat and let it simmer for approximately 20 minutes.
  6. Season the soup with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

For a vegetarian version, swap chicken for tofu or leave it out altogether.
