A vibrant and nourishing detox soup that’s packed with wholesome ingredients, perfect for a refreshing and light meal.
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant, about 2-3 minutes.
- Add the diced carrots and celery, cooking for about 5 minutes until softened.
- Stir in the zucchini and bell pepper, cooking for an additional 3-4 minutes until they’re just tender.
- Pour in the chicken broth and bring to a boil.
- Once boiling, add the shredded chicken and dried thyme. Reduce the heat and let it simmer for approximately 20 minutes.
- Season the soup with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
For a vegetarian version, swap chicken for tofu or leave it out altogether.
