Deliciously healthy cookies made with low-glycemic ingredients, perfect for the holiday season.
Ingredients
- 1 cup almond flour (or coconut flour for gluten-free)
- 1/2 cup rolled oats
- 1/4 cup erythritol or another sugar substitute
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup unsweetened applesauce
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- Optional: dark chocolate chips or nuts for added flavor
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour, rolled oats, erythritol, baking powder, cinnamon, and salt.
- In another bowl, whisk together the unsweetened applesauce, melted coconut oil, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir until combined. If desired, fold in dark chocolate chips or nuts.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them a few inches apart.
- Bake for 12-15 minutes until the edges turn golden brown.
- Let the cookies cool on the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container for up to one week or freeze for up to three months. Experiment with different spices for added flavor.
