Description

A vibrant, nutritious meal featuring tender chicken, sweet roasted potatoes, and perfectly cooked rice.


Ingredients

  • 2 chicken breasts, diced
  • 2 sweet potatoes, peeled and cubed
  • 2 cups cooked rice (white or brown)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the sweet potatoes with olive oil, salt, pepper, garlic powder, paprika, and cumin until evenly coated.
  3. Spread the sweet potatoes on a baking sheet and roast for about 25-30 minutes or until they are tender and slightly caramelized.
  4. Meanwhile, heat a skillet over medium heat and cook the diced chicken for around 7-10 minutes, or until fully cooked and nicely browned.
  5. Season the chicken with salt and pepper.
  6. To serve, layer the cooked rice, roasted sweet potatoes, and chicken in bowls.
  7. Garnish with fresh parsley if desired before serving warm.

Notes

For a lower-carb option, substitute white rice with cauliflower rice. Storage: Store leftovers separately for freshness.
