Description
A savory and sweet bowl featuring ground beef, roasted sweet potatoes, creamy cottage cheese, and a drizzle of hot honey.
Ingredients
- 1 lb lean ground beef (93%)
- 2 medium sweet potatoes, peeled and diced
- 1 sliced avocado
- 1 cup cottage cheese
- 1 diced yellow onion
- 2 tbsp olive oil
- 1 packet taco seasoning (or 2 tbsp)
- 2 tbsp hot honey
- ½ tsp paprika
- ½ tsp garlic powder
- ¼ tsp ground cinnamon
- Salt and pepper, to taste
- Optional: chopped cilantro, red pepper flakes, lime juice
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, salt, and pepper until evenly coated. Spread them on a baking sheet and roast for 40–45 minutes, stirring halfway through for even cooking.
- While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the diced onion and sauté until soft, about 3–4 minutes.
- Add the ground beef to the skillet. Cook for 6–8 minutes, breaking it apart and stirring frequently. Mix in the taco seasoning, and season with salt and pepper. Cook until browned.
- Layer sweet potatoes at the bottom of your bowl, then add a hearty scoop of ground beef, slices of avocado, and a generous dollop of cottage cheese.
- Drizzle hot honey all over the top, and sprinkle with optional garnishes like chopped cilantro or a squeeze of lime juice.
- Serve immediately and enjoy the warm, comforting flavors!
Notes
For even cooking, ensure sweet potato pieces are uniform in size. Try broiling the assembled bowl for a couple of minutes for extra crunch.
