Ingredients
- 1 lb chicken breast
- 4 cups chicken broth
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup lemon juice
- 1 cup orzo or rice
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat a splash of olive oil over medium heat. Sauté the chopped onion, minced garlic, carrots, and celery until they soften, about 5 minutes.
- Pour in the chicken broth and bring it to a gentle boil.
- Add the chicken breast and let it cook until fully cooked through, roughly 15-20 minutes.
- Remove the chicken from the pot, shred it into bite-sized pieces, and return it to the soup.
- Stir in the orzo or rice and lemon juice, allowing it to cook until the pasta is tender, roughly 10 minutes.
- Season generously with salt and pepper to taste.
