Ingredients

  • 1 pound ground chicken
  • ¼ cup diced red onion
  • 3 garlic cloves, minced
  • ¼ cup sun-dried tomatoes, finely chopped
  • 1 cup baby spinach, roughly chopped
  • 1 tablespoon chopped fresh dill
  • 2 teaspoons dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons extra virgin olive oil
  • Butter lettuce (for serving)
  • Tzatziki sauce
  • Crumbled feta cheese
  • Sliced onion, tomato, and avocado


Instructions

  1. In a medium bowl, combine ground chicken, diced red onion, minced garlic, sun-dried tomatoes, chopped spinach, dill, oregano, salt, and pepper. Mix until well combined.
  2. Divide the mixture evenly and form 4 large patties.
  3. Heat olive oil in a large skillet over medium heat. Add the patties and cook for about 5 minutes on each side, until golden brown and fully cooked through.
  4. For a smoky flavor, consider grilling the patties instead.
  5. Serve the patties as is or assemble them into burgers with fresh veggies and condiments, topped with tzatziki sauce.
