Description

A comforting and flavorful white bean soup, quick to prepare and perfect for chilly evenings.


Ingredients

  • 2 cans of white beans, drained and rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 tsp dried thyme
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. In a large pot, start by heating olive oil over medium heat.
  2. Toss in the chopped onion, carrots, and celery. Sauté these veggies until they’re softened, about 5-7 minutes.
  3. Add in the minced garlic and continue cooking for another minute.
  4. Stir in the white beans, vegetable broth, thyme, cumin, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 to 30 minutes.
  6. For a creamier finish, use an immersion blender to puree some of the soup directly in the pot (optional).
  7. Serve hot and enjoy!

Notes

Garnish with olive oil and parsley. Pairs well with crusty bread or a side salad.
