Description
A comforting and flavorful white bean soup, quick to prepare and perfect for chilly evenings.
Ingredients
- 2 cans of white beans, drained and rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tsp dried thyme
- 1 tsp cumin
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large pot, start by heating olive oil over medium heat.
- Toss in the chopped onion, carrots, and celery. Sauté these veggies until they’re softened, about 5-7 minutes.
- Add in the minced garlic and continue cooking for another minute.
- Stir in the white beans, vegetable broth, thyme, cumin, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20 to 30 minutes.
- For a creamier finish, use an immersion blender to puree some of the soup directly in the pot (optional).
- Serve hot and enjoy!
Notes
Garnish with olive oil and parsley. Pairs well with crusty bread or a side salad.
