A creamy and hearty white chicken chili perfect for busy weeknights or chilly weekends.
Ingredients
- 2 boneless skinless chicken breasts
- 1 can corn, drained
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes (with or without green chilies)
- 1 package cream cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 cups chicken broth
Instructions
- Place chicken breasts at the bottom of your crockpot.
- Add corn, black beans, diced tomatoes, onion, garlic, chili powder, cumin, and chicken broth.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- In the last 30 minutes, add cream cheese and stir until melted and combined.
- Shred the chicken in the crockpot using two forks and mix well.
- Season with salt and pepper to taste before serving.
Notes
Customize with your favorite beans or add more vegetables. For extra creaminess, top with cilantro, avocado, or sour cream.
