Description

A creamy and hearty white chicken chili perfect for busy weeknights or chilly weekends.


Ingredients

  • 2 boneless skinless chicken breasts
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes (with or without green chilies)
  • 1 package cream cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups chicken broth


Instructions

  1. Place chicken breasts at the bottom of your crockpot.
  2. Add corn, black beans, diced tomatoes, onion, garlic, chili powder, cumin, and chicken broth.
  3. Cook on low for 6-8 hours or on high for 3-4 hours.
  4. In the last 30 minutes, add cream cheese and stir until melted and combined.
  5. Shred the chicken in the crockpot using two forks and mix well.
  6. Season with salt and pepper to taste before serving.

Notes

Customize with your favorite beans or add more vegetables. For extra creaminess, top with cilantro, avocado, or sour cream.
