Ingredients

  • 1 lb chicken breast, diced
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup rice
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, garlic, carrots, and celery. Sauté until softened, about 5 minutes.
  3. Toss in the diced chicken and cook until it’s no longer pink.
  4. Stir in the rice and pour in the chicken broth. Bring to a boil.
  5. Lower the heat to a simmer and let it cook until the rice is tender, roughly 15-20 minutes.
  6. Finally, stir in the heavy cream and season with salt and pepper to taste. Serve warm.
