A comforting bowl of creamy chicken and rice soup, perfect for chilly days.
Ingredients
- 1 lb chicken breast, diced
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup rice
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, garlic, carrots, and celery. Sauté until softened, about 5 minutes.
- Toss in the diced chicken and cook until it’s no longer pink.
- Stir in the rice and pour in the chicken broth. Bring to a boil.
- Lower the heat to a simmer and let it cook until the rice is tender, roughly 15-20 minutes.
- Finally, stir in the heavy cream and season with salt and pepper to taste. Serve warm.
