Ingredients
- 1 lb chicken breast, diced
- 1 tablespoon olive oil
- 1 onion, chopped

- 2 carrots, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 teaspoons Cajun seasoning

Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, bell pepper, and diced carrots to the pot. Sauté until they soften, about 5-7 minutes.
- Incorporate the diced chicken and cook until it’s no longer pink in the center.
- Add in the Cajun seasoning, salt, and pepper, stirring well to coat the chicken and vegetables.
- Pour in the chicken broth and bring the mixture to a gentle boil.
- Reduce the heat and let it simmer for 15-20 minutes, allowing the flavors to meld beautifully.
- Finally, stir in the heavy cream, heating through, and then serve hot. Garnish with chopped green onions for that fresh touch.
Notes
For a lighter option, substitute half-and-half or milk. Add cooked rice or pasta during simmering for a heartier meal.
