Ingredients

  • 1 pound chicken breast, diced
  • 1 pound turkey thighs, diced
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish


Instructions

  1. In a large pot, heat a bit of oil over medium heat. Add the chopped onion, carrots, and celery, cooking until they soften, about 5-7 minutes.
  2. Stir in the minced garlic and cook for an additional minute.
  3. Add the diced chicken and turkey, cooking until browned.
  4. Pour in the chicken broth and add the thyme and bay leaves. Season with salt and pepper.
  5. Bring everything to a boil, then reduce heat and let it simmer for 30 minutes.
  6. Taste and adjust seasoning if needed. Remove bay leaves before serving.

Notes

Feel free to add other vegetables or adjust the seasoning based on your preference. This soup freezes well.
