Ingredients
- 1 pound chicken breast, diced
- 1 pound turkey thighs, diced
- 1 large onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 4 cloves garlic, minced
- 8 cups chicken broth
- 1 teaspoon dried thyme
- 2 bay leaves
- Salt and pepper to taste
- Optional: chopped parsley for garnish
Instructions
- In a large pot, heat a bit of oil over medium heat. Add the chopped onion, carrots, and celery, cooking until they soften, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the diced chicken and turkey, cooking until browned.
- Pour in the chicken broth and add the thyme and bay leaves. Season with salt and pepper.
- Bring everything to a boil, then reduce heat and let it simmer for 30 minutes.
- Taste and adjust seasoning if needed. Remove bay leaves before serving.
Notes
Feel free to add other vegetables or adjust the seasoning based on your preference. This soup freezes well.
