Ingredients
- 3-4 boneless, skinless chicken breasts
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 carrots, thinly sliced
- 2 green onions, chopped
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh minced garlic
Instructions
- Start by gathering all your ingredients and chop the vegetables into bite-sized pieces.
- Cook the Lo Mein noodles according to the package instructions until they reach al dente; drain and set aside.
- Heat a large skillet or wok over medium-high heat. Add a splash of oil and sauté the chicken for about 6-8 minutes, or until it’s golden brown and fully cooked through. Remove the chicken from the skillet and set it aside.
- In the same pan, add the bell peppers, carrots, and green onions, cooking until they are tender yet still crisp—around 3-4 minutes.
- Return the cooked chicken to the skillet with the vegetables. Then, add the cooked Lo Mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well blended.
- Serve hot, adding extra soy sauce to taste if desired.
