  • 3-4 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic


Instructions

  1. Start by gathering all your ingredients and chop the vegetables into bite-sized pieces.
  2. Cook the Lo Mein noodles according to the package instructions until they reach al dente; drain and set aside.
  3. Heat a large skillet or wok over medium-high heat. Add a splash of oil and sauté the chicken for about 6-8 minutes, or until it’s golden brown and fully cooked through. Remove the chicken from the skillet and set it aside.
  4. In the same pan, add the bell peppers, carrots, and green onions, cooking until they are tender yet still crisp—around 3-4 minutes.
  5. Return the cooked chicken to the skillet with the vegetables. Then, add the cooked Lo Mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well blended.
  6. Serve hot, adding extra soy sauce to taste if desired.
