Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar for coating
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined.
- In another large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Whisk until combined.
- Add the eggs and vanilla extract to the sugar mixture and mix well until fully incorporated.
- Gradually fold in the dry ingredients from the first bowl to the wet mixture, stirring just until combined.
- Chill the dough in the refrigerator for about 30 minutes to help it firm up.
- Scoop out tablespoon-sized balls of dough, roll them into balls, and coat them generously in powdered sugar.
- Place them on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 10-12 minutes; the edges should be set while the centers remain soft.
- Allow the cookies to cool on the baking sheet before transferring them to a wire rack.
