Description

A comforting one-dish meal made with ground beef, creamy mushroom soup, and rice topped with melted cheddar.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1 cup long-grain rice, uncooked
  • 2 cups beef broth
  • 1 (10.75 oz) can cream of mushroom soup
  • 1 cup cheddar cheese, shredded
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, brown the ground beef with chopped onion and minced garlic for about 6–8 minutes, then drain excess fat.
  3. Stir in uncooked rice, beef broth, cream of mushroom soup, salt, black pepper, and paprika. Simmer for about 5 minutes.
  4. Transfer the mixture to the prepared baking dish and cover with aluminum foil. Bake for 25 minutes.
  5. Remove foil, sprinkle cheddar cheese on top, and bake uncovered for an additional 10–15 minutes until cheese is melted and bubbly.
  6. Let rest for 5 minutes and garnish with chopped parsley before serving.

Notes

Use ground turkey or chicken for a lighter option. Substitute cream of celery or chicken soup if desired. For added flavor, consider using a splash of dry white wine with the beef broth.
