Wholesome and chewy Banana Oatmeal Bars packed with flavor, perfect for a snack or breakfast option.


Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 2 ripe bananas (approximately 1 cup mashed)
  • 1/2 cup peanut butter
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1/3 cup dark chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, cinnamon, salt, and baking powder.
  3. In another bowl, mash the bananas thoroughly. Add the peanut butter, maple syrup, and vanilla extract. Mix until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fold in the chocolate chips until evenly distributed.
  6. Pour the mixture into the prepared baking pan, spreading it out evenly. Optionally, sprinkle a few extra chocolate chips on top.
  7. Bake for about 20-25 minutes or until the edges turn golden brown.
  8. Let the bars cool in the pan for 10 minutes before slicing into squares.
