Wholesome and chewy Banana Oatmeal Bars packed with flavor, perfect for a snack or breakfast option.
Ingredients
- 1 1/2 cups rolled oats
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 tsp baking powder
- 2 ripe bananas (approximately 1 cup mashed)
- 1/2 cup peanut butter
- 1/3 cup maple syrup
- 1 tsp vanilla extract
- 1/3 cup dark chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a large mixing bowl, combine the rolled oats, cinnamon, salt, and baking powder.
- In another bowl, mash the bananas thoroughly. Add the peanut butter, maple syrup, and vanilla extract. Mix until well combined.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Fold in the chocolate chips until evenly distributed.
- Pour the mixture into the prepared baking pan, spreading it out evenly. Optionally, sprinkle a few extra chocolate chips on top.
- Bake for about 20-25 minutes or until the edges turn golden brown.
- Let the bars cool in the pan for 10 minutes before slicing into squares.
