Description

A simple yet flavorful dish combining baked feta, juicy tomatoes, and fresh spinach, topped with perfectly baked eggs.


Ingredients

  • 4 large eggs
  • 200g feta cheese
  • 1 cup cherry tomatoes
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, place the cherry tomatoes and feta cheese in the center. Drizzle with olive oil, then sprinkle generously with salt and pepper.
  3. Bake in the preheated oven for about 15-20 minutes, or until the tomatoes are blistered and the feta is soft and slightly caramelized.
  4. Remove the dish from the oven, and carefully crack the eggs over the baked feta and tomatoes. Return to the oven and bake for an additional 10-12 minutes, or until the egg whites have set and the yolks remain runny.
  5. Stir in the fresh spinach, allowing it to wilt slightly. Taste and adjust seasoning if necessary.
  6. Garnish with fresh herbs of your choice and serve warm.

Notes
