Description

A comforting and hearty autumn soup made with savory sausage, tortellini, and vibrant spinach, perfect for quick weeknight dinners.


Ingredients

  • 1 pound sausage (Italian sausage works great)
  • 1 package three-cheese tortellini
  • 1 cup sweet potatoes, diced
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned.
  2. Add minced garlic and diced sweet potatoes, sauté for about five minutes.
  3. Pour in chicken broth and bring to a rolling boil.
  4. Stir in the tortellini and cook according to package instructions.
  5. Reduce heat, and gently stir in fresh spinach and heavy cream until wilted.
  6. Season with salt and pepper to taste.
  7. Simmer for a few minutes until heated through. Serve hot.

Notes

For a lighter option, substitute half-and-half for the heavy cream. This soup stores well in the fridge for up to 4 days or can be frozen without cream.
