A comforting and hearty autumn soup made with savory sausage, tortellini, and vibrant spinach, perfect for quick weeknight dinners.
Ingredients
- 1 pound sausage (Italian sausage works great)
- 1 package three-cheese tortellini
- 1 cup sweet potatoes, diced
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned.
- Add minced garlic and diced sweet potatoes, sauté for about five minutes.
- Pour in chicken broth and bring to a rolling boil.
- Stir in the tortellini and cook according to package instructions.
- Reduce heat, and gently stir in fresh spinach and heavy cream until wilted.
- Season with salt and pepper to taste.
- Simmer for a few minutes until heated through. Serve hot.
Notes
For a lighter option, substitute half-and-half for the heavy cream. This soup stores well in the fridge for up to 4 days or can be frozen without cream.
