Quick and nutritious vegan burrito wraps filled with avocado, black beans, and fresh veggies.
Ingredients
- 1 (15-ounce) can of Black Beans, rinsed and drained
- 1 large ripe Avocado
- ½ cup of Frozen or Canned Corn
- ¼ cup of finely chopped Red Onion
- ¼ cup of fresh Cilantro, chopped
- 1 tablespoon of Lime Juice
- ½ teaspoon of Cumin Powder
- ¼ teaspoon of Chili Powder
- Salt and Black Pepper to taste
- 4 large (10-inch) Flour Tortillas
Instructions
- Mash the avocado in a medium-sized mixing bowl until desired consistency.
- Add lime juice to the mashed avocado and mix to prevent browning.
- Incorporate black beans, corn, red onion, and cilantro into the avocado mixture.
- Season with cumin, chili powder, salt, and black pepper.
- Gently fold all ingredients together using a spatula.
- Warm the tortillas in a skillet for 15-20 seconds per side or microwave.
- Lay a warm tortilla flat, spoon one-quarter of the filling into the center, and roll it up snugly.
- Repeat with remaining tortillas and filling. Serve warm.
Notes
Best served immediately while warm. Store leftovers in the fridge for up to two days.
