Description

Quick and nutritious vegan burrito wraps filled with avocado, black beans, and fresh veggies.


Ingredients

  • 1 (15-ounce) can of Black Beans, rinsed and drained
  • 1 large ripe Avocado
  • ½ cup of Frozen or Canned Corn
  • ¼ cup of finely chopped Red Onion
  • ¼ cup of fresh Cilantro, chopped
  • 1 tablespoon of Lime Juice
  • ½ teaspoon of Cumin Powder
  • ¼ teaspoon of Chili Powder
  • Salt and Black Pepper to taste
  • 4 large (10-inch) Flour Tortillas


Instructions

  1. Mash the avocado in a medium-sized mixing bowl until desired consistency.
  2. Add lime juice to the mashed avocado and mix to prevent browning.
  3. Incorporate black beans, corn, red onion, and cilantro into the avocado mixture.
  4. Season with cumin, chili powder, salt, and black pepper.
  5. Gently fold all ingredients together using a spatula.
  6. Warm the tortillas in a skillet for 15-20 seconds per side or microwave.
  7. Lay a warm tortilla flat, spoon one-quarter of the filling into the center, and roll it up snugly.
  8. Repeat with remaining tortillas and filling. Serve warm.

Notes

Best served immediately while warm. Store leftovers in the fridge for up to two days.
