Description

These yogurt-enriched pancakes are tender, slightly tangy, and perfect for a quick breakfast or leisurely brunch.


Ingredients

  • 2 large eggs
  • 2 tbsp maple syrup or honey
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 cup full-fat plain Greek yogurt
  • 1/2 cup whole milk


Instructions

  1. In a medium bowl, crack the eggs and add maple syrup or honey. Whisk until smooth and slightly frothy.
  2. In a separate bowl, whisk together the flour, baking powder, and salt.
  3. Add Greek yogurt, milk, and vanilla to the egg mixture. Stir until combined and mostly smooth.
  4. Pour the wet mixture into the dry ingredients. Gently stir with a spatula until just combined.
  5. Heat a skillet over medium and add a thin layer of fat to prevent sticking.
  6. Scoop about 1/4 cup batter per pancake onto the skillet. Cook until bubbles appear and edges look set, about 2–3 minutes. Flip and brown until golden, another 1–2 minutes.
  7. Serve warm with butter, syrup, fruit, or toppings of choice.

Notes

Let the batter rest 5–10 minutes before cooking for better texture. Keep pancakes warm in a low oven if needed.
