A comforting and creamy soup version of traditional lasagna, perfect for chilly evenings or gatherings.
Ingredients
- 1 pound ground meat (Italian sausage or ground beef)
- 8 oz lasagna noodles, broken into pieces
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pot, brown the ground meat over medium heat. Drain any excess fat.
- Add the diced onion and minced garlic, sautéing until softened.
- Pour in the chicken broth along with the broken lasagna noodles, Italian seasoning, salt, and pepper. Bring to a boil.
- Reduce heat and let it simmer for about 15 minutes, or until the noodles are cooked.
- Stir in the heavy cream, ricotta cheese, and mozzarella cheese until melted and combined.
- Serve hot, garnished with fresh basil.
Notes
Pairs well with a green salad or garlic bread. Store leftovers in an airtight container for up to three days.
