Description

A comforting and creamy soup version of traditional lasagna, perfect for chilly evenings or gatherings.


Ingredients

  • 1 pound ground meat (Italian sausage or ground beef)
  • 8 oz lasagna noodles, broken into pieces
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. In a large pot, brown the ground meat over medium heat. Drain any excess fat.
  2. Add the diced onion and minced garlic, sautéing until softened.
  3. Pour in the chicken broth along with the broken lasagna noodles, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Reduce heat and let it simmer for about 15 minutes, or until the noodles are cooked.
  5. Stir in the heavy cream, ricotta cheese, and mozzarella cheese until melted and combined.
  6. Serve hot, garnished with fresh basil.

Notes

Pairs well with a green salad or garlic bread. Store leftovers in an airtight container for up to three days.
