A comforting and creamy twist on traditional chili featuring tender chicken, white beans, and zesty green chilies.
Ingredients
- 1 lb boneless, skinless chicken breast
- 1 can white beans, rinsed and drained
- 1 can diced green chilies
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup sour cream
- 1 cup shredded cheese (optional)
- Fresh cilantro for garnish (optional)
Instructions
- In a pot over medium heat, pour in a little oil and sauté the onions and garlic until they are soft and fragrant.
- Add the chicken breast and cook until it’s no longer pink, about 5-7 minutes.
- Stir in the green chilies, white beans, chicken broth, cumin, chili powder, salt, and pepper. Mix well.
- Bring the mixture to a gentle simmer and cook for about 15-20 minutes to allow flavors to meld.
- Remove the chicken from the pot, shred it using two forks, and return it to the pot.
- Gently stir in the sour cream and heat through until combined.
- Serve hot, topped with shredded cheese and fresh cilantro.
Notes
Adjust the spices to your taste. For a vegetarian option, replace chicken with beans or corn.
