  • 1 package potato gnocchi
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk
  • 1 cup spinach or kale
  • 1 cup cherry tomatoes, halved
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)


Instructions

  1. In a large pot, warm the olive oil over medium heat.
  2. Add the diced onion, carrots, and celery. Sauté for about 5 minutes, or until the vegetables start to soften.
  3. Stir in the minced garlic and cook for an additional minute to release its aromatics.
  4. Pour in the vegetable broth and bring to a gentle simmer.
  5. Add the potato gnocchi and halved cherry tomatoes. Cook according to the package instructions, usually about 3-5 minutes until the gnocchi float to the surface.
  6. Stir in the heavy cream or coconut milk and the spinach or kale. Cook until the greens are wilted.
  7. Mix in the grated Parmesan cheese, and season with salt and pepper to taste.
  8. Serve hot, garnished with fresh herbs if desired.

Notes

For a dairy-free option, substitute coconut milk for the heavy cream. This soup can be customized with seasonal vegetables.
