Ingredients
- 1 package potato gnocchi
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream or coconut milk
- 1 cup spinach or kale
- 1 cup cherry tomatoes, halved
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- In a large pot, warm the olive oil over medium heat.
- Add the diced onion, carrots, and celery. Sauté for about 5 minutes, or until the vegetables start to soften.
- Stir in the minced garlic and cook for an additional minute to release its aromatics.
- Pour in the vegetable broth and bring to a gentle simmer.
- Add the potato gnocchi and halved cherry tomatoes. Cook according to the package instructions, usually about 3-5 minutes until the gnocchi float to the surface.
- Stir in the heavy cream or coconut milk and the spinach or kale. Cook until the greens are wilted.
- Mix in the grated Parmesan cheese, and season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs if desired.
Notes
For a dairy-free option, substitute coconut milk for the heavy cream. This soup can be customized with seasonal vegetables.
