Ingredients
- 1 cup French green lentils
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- Crusty bread for serving
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, carrots, and celery (the mirepoix) and sauté until softened, about 5-7 minutes.
- Add garlic and sauté for another minute until fragrant.
- Stir in the lentils, vegetable broth, thyme, cumin, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 25-30 minutes, or until the lentils are tender.
- Taste and adjust seasoning as needed.
- Serve hot, adding crusty bread for dunking.
Notes
For added nutritional value, consider adding spinach or kale. Add a splash of red wine or lemon juice for enhanced flavor before serving.
