Ingredients

  • 1 cup French green lentils
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Crusty bread for serving


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, carrots, and celery (the mirepoix) and sauté until softened, about 5-7 minutes.
  3. Add garlic and sauté for another minute until fragrant.
  4. Stir in the lentils, vegetable broth, thyme, cumin, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 25-30 minutes, or until the lentils are tender.
  6. Taste and adjust seasoning as needed.
  7. Serve hot, adding crusty bread for dunking.
