Ingredients
- 1 can chickpeas, drained and rinsed
- 4 cups vegetable broth
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cumin; cook for 1 additional minute until aromatic.
- Add chickpeas and vegetable broth, bringing to a gentle simmer. Cook for about 10 minutes.
- Use an immersion blender to puree the soup until smooth and creamy, or blend in batches.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
