Description

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat the olive oil in a pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cumin; cook for 1 additional minute until aromatic.
  3. Add chickpeas and vegetable broth, bringing to a gentle simmer. Cook for about 10 minutes.
  4. Use an immersion blender to puree the soup until smooth and creamy, or blend in batches.
  5. Season with salt and pepper to taste.
