Description

A refreshing salad featuring creamy tahini, zesty lemon, and nutritious chickpeas, perfect for picnics and potlucks.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1/4 cup water
  • Salt and pepper to taste
  • 1/4 cup chopped parsley
  • 1/2 cucumber, diced
  • 1/2 red bell pepper, diced


Instructions

  1. In a bowl, combine the tahini, lemon juice, minced garlic, and water. Whisk until smooth.
  2. Add the drained chickpeas, diced cucumber, diced red bell pepper, and chopped parsley to the bowl.
  3. Season with salt and pepper to taste.
  4. Toss everything together until well combined.
  5. Serve chilled or at room temperature.

Notes

Use freshly squeezed lemon juice for an added burst of flavor. Experiment with different veggies for variety.
