Ingredients
- 1 can chickpeas, drained and rinsed
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1/4 cup water
- Salt and pepper to taste
- 1/4 cup chopped parsley
- 1/2 cucumber, diced
- 1/2 red bell pepper, diced
Instructions
- In a bowl, combine the tahini, lemon juice, minced garlic, and water. Whisk until smooth.
- Add the drained chickpeas, diced cucumber, diced red bell pepper, and chopped parsley to the bowl.
- Season with salt and pepper to taste.
- Toss everything together until well combined.
- Serve chilled or at room temperature.
