Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chiles
  • 1 packet taco seasoning
  • 2 cups beef or chicken broth
  • 1 cup diced onions
  • 1 cup bell peppers, chopped
  • Salt and pepper to taste
  • Toppings: shredded cheese, sour cream, avocado, tortilla chips


Instructions

  1. In a large pot, brown the ground beef or turkey over medium heat until fully cooked. Drain any excess fat.
  2. Add the diced onions and chopped bell peppers to the pot and sauté until soft and aromatic.
  3. Stir in the black beans, corn, diced tomatoes, taco seasoning, and broth until well combined.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for about 20 minutes.
  5. Season with salt and pepper to taste. Serve hot, topped with your favorite garnishes like shredded cheese, sour cream, avocado, and tortilla chips.

Notes
