Ingredients
- 1 ½ cups sugar cookie crumbs
- ½ cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sugar cookie dough balls
Instructions
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, combine sugar cookie crumbs and melted butter. Press the mixture evenly into the bottom of a 9-inch springform pan.
- In another bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
- Add the eggs, one at a time, mixing well after each addition.
- Gently fold in the sugar cookie dough balls until evenly distributed.
- Pour the cheesecake filling over the prepared crust in the springform pan.
- Bake for 50-60 minutes, or until the center is set and just slightly jiggles.
- Allow it to cool at room temperature, then refrigerate for at least 4 hours before serving.
