Ingredients

  • 1 lb ground beef
  • 1 cup rice
  • 4 cups broth (homemade or store-bought)
  • 2 bell peppers, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Stir in the chopped bell peppers and cook for another 3-4 minutes.
  4. Incorporate the rice, broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a boil.
  5. Reduce heat to a simmer and cook for 20-25 minutes, until rice is tender.
  6. Taste and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh parsley.

Notes

For a lighter option, substitute ground turkey. For vegetarian, replace ground beef with lentils and use vegetable broth.
