Ingredients
- 1 lb ground beef
- 1 cup rice
- 4 cups broth (homemade or store-bought)
- 2 bell peppers, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
- Add the chopped onion and garlic, sauté until translucent.
- Stir in the chopped bell peppers and cook for another 3-4 minutes.
- Incorporate the rice, broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a boil.
- Reduce heat to a simmer and cook for 20-25 minutes, until rice is tender.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.

For a lighter option, substitute ground turkey. For vegetarian, replace ground beef with lentils and use vegetable broth.
