Spinach and Ricotta Stuffed Shells

Description

Deliciously cheesy stuffed jumbo pasta shells filled with ricotta, spinach, and topped with marinara and mozzarella.


Ingredients

  • 20 jumbo pasta shells
  • 1 cup ricotta cheese
  • 1 cup spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cups marinara sauce
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to the package instructions until they’re al dente. Drain and set aside.
  3. In a mixing bowl, combine ricotta cheese, chopped spinach, half of the mozzarella cheese, grated Parmesan cheese, and the egg. Season this mixture with salt and pepper according to your taste.
  4. Carefully stuff each pasta shell with the ricotta and spinach mixture.
  5. Spread half of the marinara sauce in a baking dish. Place the stuffed shells on top, and cover them with the remaining marinara sauce.
  6. Sprinkle the rest of the mozzarella cheese over the top.
  7. Bake uncovered for 25-30 minutes, or until the cheese is bubbly and golden brown.
  8. Finish with a garnish of fresh basil before serving.

Notes

For a flavorful twist, add sautéed mushrooms or roasted red peppers. You can also substitute ricotta with cottage cheese or vegan cheese alternatives.
