Description
Deliciously cheesy stuffed jumbo pasta shells filled with ricotta, spinach, and topped with marinara and mozzarella.
Ingredients
- 20 jumbo pasta shells
- 1 cup ricotta cheese
- 1 cup spinach, chopped
- 1 cup mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 egg
- 2 cups marinara sauce
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the jumbo pasta shells according to the package instructions until they’re al dente. Drain and set aside.
- In a mixing bowl, combine ricotta cheese, chopped spinach, half of the mozzarella cheese, grated Parmesan cheese, and the egg. Season this mixture with salt and pepper according to your taste.
- Carefully stuff each pasta shell with the ricotta and spinach mixture.
- Spread half of the marinara sauce in a baking dish. Place the stuffed shells on top, and cover them with the remaining marinara sauce.
- Sprinkle the rest of the mozzarella cheese over the top.
- Bake uncovered for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Finish with a garnish of fresh basil before serving.
Notes
For a flavorful twist, add sautéed mushrooms or roasted red peppers. You can also substitute ricotta with cottage cheese or vegan cheese alternatives.
