Description

Delightful bite-sized pinwheels filled with creamy spinach dip, perfect for gatherings, potlucks, and cozy nights.


Ingredients

  • 1 bag frozen chopped spinach (10 oz), thawed and well-drained
  • 1 block cream cheese (8 oz), softened
  • ½ cup grated Parmesan cheese
  • ¼ cup mayonnaise
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp black pepper
  • Pinch of red pepper flakes (optional)
  • 1 sheet of thawed puff pastry, kept cold
  • 1 egg, whisked with a splash of water for brushing


Instructions

  1. In a bowl, combine the softened cream cheese, grated Parmesan, mayonnaise, garlic powder, onion powder, and black pepper. Add the thawed spinach and stir until well incorporated.
  2. Lightly dust your countertop with flour and roll out the puff pastry. Spread the spinach mixture evenly over the pastry, leaving one long edge clean.
  3. Starting from the filled edge, roll the pastry tightly like a jelly roll.
  4. Wrap the log in plastic wrap and refrigerate for about 30 minutes. Preheat your oven to 400°F (200°C).
  5. Slice the log into half-inch rounds and place on a parchment-lined baking sheet. Brush with egg wash and bake for 15-20 minutes until golden brown.

Notes

Ensure excess moisture is removed from the spinach to avoid soggy pinwheels. You can make these ahead of time and freeze them for later use.
