Description

A wholesome and comforting Spinach and White Bean Soup that combines earthy flavors of white beans with fresh spinach for a nutritious meal.


Ingredients

  • 2 cups fresh spinach
  • 1 can (15 oz) white beans, rinsed and drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp olive oil
  • Salt and pepper to taste
  • Optional: lemon juice for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until soft and translucent.
  3. Stir in the rinsed white beans and pour in the vegetable broth. Bring to a gentle simmer.
  4. Add the fresh spinach and stir, cooking for about five minutes until the spinach is wilted.
  5. Season with salt and pepper to taste, and add lemon juice before serving.

Notes

This soup can be stored in the fridge for up to three days, or frozen for up to three months. For a creamier texture, blend a portion of the soup before adding spinach.
