Description

A vibrant skillet dish combining ground beef, sweet potatoes, and spices for a quick and nutrient-packed meal.


Ingredients

  • 1 pound ground beef
  • 2 medium sweet potatoes, diced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 2 tablespoons olive oil


Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chopped onion and bell pepper; sauté until softened, about 5 minutes.
  3. Add minced garlic and cook for another minute, stirring frequently.
  4. Stir in the ground beef and cook until browned.
  5. Add diced sweet potatoes along with chili powder, cumin, salt, and pepper; mix well.
  6. Cover the skillet and cook for about 10-15 minutes until the sweet potatoes are tender, stirring occasionally.
  7. Stir in black beans and corn; heat through for an additional 5 minutes.

Notes

Serve garnished with cilantro or a dollop of sour cream. Great as a filling for tacos or inside a burrito.
