A vibrant skillet dish combining ground beef, sweet potatoes, and spices for a quick and nutrient-packed meal.
Ingredients
- 1 pound ground beef
- 2 medium sweet potatoes, diced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper, to taste
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and bell pepper; sauté until softened, about 5 minutes.
- Add minced garlic and cook for another minute, stirring frequently.
- Stir in the ground beef and cook until browned.
- Add diced sweet potatoes along with chili powder, cumin, salt, and pepper; mix well.
- Cover the skillet and cook for about 10-15 minutes until the sweet potatoes are tender, stirring occasionally.
- Stir in black beans and corn; heat through for an additional 5 minutes.
Notes
Serve garnished with cilantro or a dollop of sour cream. Great as a filling for tacos or inside a burrito.
