Description

A vibrant and satisfying Southwest Chicken Salad that combines grilled chicken, fresh veggies, and zesty chipotle-lime dressing.


Ingredients

  • 1 lb grilled chicken, diced
  • 1 can black beans, rinsed and drained
  • 1 cup sweet corn, fresh or frozen
  • 4 cups romaine lettuce, chopped
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chipotle-lime dressing
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the diced grilled chicken, black beans, sweet corn, romaine lettuce, avocado, and cherry tomatoes.
  2. Drizzle the chipotle-lime dressing over the salad and toss gently to combine all the ingredients.
  3. Season with salt and pepper to taste.

Notes
