A vibrant and satisfying Southwest Chicken Salad that combines grilled chicken, fresh veggies, and zesty chipotle-lime dressing.
Ingredients
- 1 lb grilled chicken, diced
- 1 can black beans, rinsed and drained
- 1 cup sweet corn, fresh or frozen
- 4 cups romaine lettuce, chopped
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup chipotle-lime dressing
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced grilled chicken, black beans, sweet corn, romaine lettuce, avocado, and cherry tomatoes.
- Drizzle the chipotle-lime dressing over the salad and toss gently to combine all the ingredients.
- Season with salt and pepper to taste.
- Serve immediately or refrigerate for meal prep to enjoy later.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. To keep the lettuce crisp, add the dressing right before serving.
