Description

Delightfully soft and chewy gingerbread men cookies perfect for holiday gatherings or cozy family nights.


Ingredients

  • 3/4 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 3/4 cup molasses
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 Tbsp ground cinnamon
  • 1 Tbsp ground ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp cloves
  • 1 whole egg
  • 1 tsp baking soda
  • 3 to 3 1/4 cups all-purpose flour
  • 2 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)
  • 3 to 4 Tbsp milk (whole or reduced fat)
  • Decorative candies or sprinkles (optional)


Instructions

  1. In a mixing bowl, combine the melted butter, brown sugar, and molasses. Mix until well combined.
  2. Add in the vanilla extract, salt, cinnamon, ginger, nutmeg, cloves, and the egg. Mix until smooth.
  3. In another bowl, whisk together the baking soda and flour. Gradually add the flour mixture to the wet ingredients, mixing until a dough forms.
  4. Wrap the dough in plastic wrap and chill it in the refrigerator for about 30 minutes.
  5. Preheat your oven to 350°F (175°C).
  6. Roll out the chilled dough on a floured surface and cut into the desired gingerbread men shapes.
  7. Place the shapes on a baking sheet lined with parchment paper and bake for 8-10 minutes, until edges are firm.
  8. Allow to cool completely before decorating.
  9. To prepare the icing, mix the powdered sugar, vanilla extract, and milk to your desired consistency. Pipe or spread it onto the cooled cookies and add sprinkles for extra cheer.

Notes

For a gluten-free version, consider using almond or coconut flour. Allow the dough to chill for best flavor.
