Ingredients

  • 4 chicken breasts
  • 2 lemons (juiced and zested)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 cup long-grain rice
  • 2 cups water
  • Fresh herbs for garnish (optional)


Instructions

  1. In a slow cooker, whisk together lemon juice, lemon zest, olive oil, garlic, thyme, rosemary, salt, and pepper.
  2. Add the chicken breasts to the slow cooker and coat them with the lemon herb mixture.
  3. Pour chicken broth over the chicken.
  4. Cover and cook on low for 4-6 hours or until the chicken is cooked through and tender.
  5. In a pot, bring water and a pinch of salt to a boil. Add the rice, reduce heat, cover, and simmer for about 15-20 minutes until cooked.
