Description

A hearty cowboy casserole made in a slow cooker, blending rich flavors and satisfying ingredients, perfect for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 1 can kidney beans, drained
  • 2 cups potatoes, diced
  • 1 cup shredded cheese (cheddar)
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 1 packet taco seasoning
  • Salt and pepper to taste

Instructions

  1. In a skillet, brown the ground beef with the chopped onion over medium heat until thoroughly cooked. Drain any excess fat.
  2. Transfer the beef mixture to the slow cooker. Add the drained kidney beans, diced potatoes, diced tomatoes, taco seasoning, salt, and pepper.
  3. Stir to ensure everything is well mixed.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are soft and tender.
  5. Sprinkle the shredded cheese on top, cover, and let it melt just before serving.
  6. Serve warm and enjoy!

Notes

For a lighter option, substitute ground beef with turkey or a plant-based protein. Make it vegetarian by increasing the beans and adding more vegetables.
