Ingredients
- 1 lb ground beef
- 1 can kidney beans, drained
- 2 cups potatoes, diced
- 1 cup shredded cheese (cheddar)
- 1 can diced tomatoes
- 1 onion, chopped
- 1 packet taco seasoning
- Salt and pepper to taste
Instructions
- In a skillet, brown the ground beef with the chopped onion over medium heat until thoroughly cooked. Drain any excess fat.
- Transfer the beef mixture to the slow cooker. Add the drained kidney beans, diced potatoes, diced tomatoes, taco seasoning, salt, and pepper.
- Stir to ensure everything is well mixed.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are soft and tender.
- Sprinkle the shredded cheese on top, cover, and let it melt just before serving.
- Serve warm and enjoy!
Notes
For a lighter option, substitute ground beef with turkey or a plant-based protein. Make it vegetarian by increasing the beans and adding more vegetables.
