Description

A comforting and flavorful slow-cooked beef dish that is perfect for family gatherings and hearty weeknight dinners.


Ingredients

  • 2 pounds beef chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons soy sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Season the beef chuck roast with salt and pepper, ensuring it’s well-coated.
  2. In a large skillet, heat a dash of oil and sear the beef on all sides until it’s nicely browned.
  3. Transfer the seared beef to a slow cooker.
  4. Layer the chopped onion and minced garlic over the top of the beef.
  5. In a separate bowl, mix together the beef broth, soy sauce, and Worcestershire sauce, then pour this mixture over the beef.
  6. Cover your slow cooker and cook on low for about 480 minutes, or until the beef is tender and easily pulls apart with a fork.
  7. Once done, mix the cornstarch with a small amount of water to create a slurry, then stir it into the gravy to thicken it.
  8. Plate up the beef with the luscious gravy and sprinkle some fresh parsley for a pop of color before serving.

Notes

Optional: Add a splash of red wine to the broth for extra flavor or consider adding root vegetables for a one-pot meal.
