A comforting and flavorful slow-cooked beef dish that is perfect for family gatherings and hearty weeknight dinners.
Ingredients
- 2 pounds beef chuck roast
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons soy sauce
- 2 tablespoons Worcestershire sauce
- 1 tablespoon cornstarch
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season the beef chuck roast with salt and pepper, ensuring it’s well-coated.
- In a large skillet, heat a dash of oil and sear the beef on all sides until it’s nicely browned.
- Transfer the seared beef to a slow cooker.
- Layer the chopped onion and minced garlic over the top of the beef.
- In a separate bowl, mix together the beef broth, soy sauce, and Worcestershire sauce, then pour this mixture over the beef.
- Cover your slow cooker and cook on low for about 480 minutes, or until the beef is tender and easily pulls apart with a fork.
- Once done, mix the cornstarch with a small amount of water to create a slurry, then stir it into the gravy to thicken it.
- Plate up the beef with the luscious gravy and sprinkle some fresh parsley for a pop of color before serving.
Notes
Optional: Add a splash of red wine to the broth for extra flavor or consider adding root vegetables for a one-pot meal.
