A comforting one-pan meal featuring smoky kielbasa and vibrant roasted vegetables, perfect for busy weeknights and meal prep.
Ingredients
- 1 lb smoky kielbasa
- 2 cups butternut squash, diced
- 2 bell peppers, chopped
- 1 zucchini, sliced
- 1 red onion, cut into wedges
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp smoked paprika
- 1 tsp garlic salt
- 1/2 tsp ground black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the kielbasa and all vegetables into bite-sized pieces.
- Toss the kielbasa and veggies together in a large mixing bowl with olive oil, dried thyme, smoked paprika, garlic salt, and black pepper until evenly coated.
- Arrange everything in a single layer on a sheet pan for even roasting.
- Bake for about 25-30 minutes, or until the veggies are tender and the kielbasa is browned.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 4 days or frozen for up to 3 months. Reheat to an internal temperature of 165°F (74°C).
