Description

A comforting one-pan meal featuring smoky kielbasa and vibrant roasted vegetables, perfect for busy weeknights and meal prep.


Ingredients

  • 1 lb smoky kielbasa
  • 2 cups butternut squash, diced
  • 2 bell peppers, chopped
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1 tsp garlic salt
  • 1/2 tsp ground black pepper


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the kielbasa and all vegetables into bite-sized pieces.
  3. Toss the kielbasa and veggies together in a large mixing bowl with olive oil, dried thyme, smoked paprika, garlic salt, and black pepper until evenly coated.
  4. Arrange everything in a single layer on a sheet pan for even roasting.
  5. Bake for about 25-30 minutes, or until the veggies are tender and the kielbasa is browned.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 4 days or frozen for up to 3 months. Reheat to an internal temperature of 165°F (74°C).
