Description

A colorful, flavorful one-pan meal featuring marinated chicken and mixed Mediterranean vegetables.


Ingredients

  • 4 chicken thighs or breasts
  • 2 cups mixed vegetables (like bell peppers, zucchini, and red onion)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • Feta cheese (optional, for serving)
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the olive oil, lemon juice, dried oregano, salt, and pepper.
  3. Add the chicken to the marinade and let it sit for at least 30 minutes.
  4. On a sheet pan, arrange the mixed vegetables in an even layer.
  5. Place the marinated chicken on top of the veggies, ensuring everything is spaced out.
  6. Roast in the oven for about 25-30 minutes, until the chicken is cooked through and the veggies are tender.
  7. Sprinkle with feta cheese and fresh parsley just before serving.
