Ingredients
- 4 chicken thighs or breasts
- 2 cups mixed vegetables (like bell peppers, zucchini, and red onion)
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 teaspoons dried oregano
- Salt and pepper to taste
- Feta cheese (optional, for serving)
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix together the olive oil, lemon juice, dried oregano, salt, and pepper.
- Add the chicken to the marinade and let it sit for at least 30 minutes.
- On a sheet pan, arrange the mixed vegetables in an even layer.
- Place the marinated chicken on top of the veggies, ensuring everything is spaced out.
- Roast in the oven for about 25-30 minutes, until the chicken is cooked through and the veggies are tender.
- Sprinkle with feta cheese and fresh parsley just before serving.
