Ingredients

  • 4 chicken thighs or breasts
  • 4 medium potatoes, diced
  • 2 cups mixed vegetables (e.g., bell peppers, broccoli, carrots)
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon dried thyme or rosemary
  • 1 tablespoon olive oil


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Melt the butter in a small saucepan over medium heat and stir in minced garlic until fragrant (about 1 minute).
  3. On a sheet pan, mix diced potatoes and mixed vegetables with olive oil, salt, pepper, and herbs.
