Ingredients
- 1 lb chicken breast, sliced into 1/2-inch strips
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- Tortillas, for serving
- Toppings: sour cream, shredded cheese, salsa, lime wedges, chopped cilantro, sliced avocado
Instructions
- Preheat the oven to 400°F (200°C) and line a sheet pan with foil or parchment.
- Combine chicken, bell pepper, and onion in a bowl.
- Add olive oil, chili powder, cumin, garlic powder, salt, and pepper, tossing well to coat.
- Spread the mixture on the sheet pan in a single layer.
- Roast for 20–25 minutes, stirring halfway, until chicken reaches 165°F (74°C) and veggies are slightly charred.
- Rest for 3–5 minutes, serve in warm tortillas with toppings.
Notes
For a gluten-free meal, use corn tortillas. Ensure chicken is uniformly sliced for even cooking. Let the chicken rest for juiciness.
